Gesso does sound like a difficult medium to me. I took an art class as a child and worked once with oils, but I seemed to fare better with watercolors. And who doesn't love mucking in clay?
The wonder of art and all creative gifts is that there is always something new to learn and to try. It sounds as if you are experimenting, which is a great way to begin a masterpiece.
